garden pasta tutorial


My honey went golfing on Wednesday (7/6) while I stayed home and worked on the latest customer quilt.  It was not a fun experience as the borders were WAY bigger than the quilt…meaning a LOT of waving and finessing during quilting.  At dinnertime I still had 5 rows to go  :~(.  Loree & Reg were responsible for most of our dinner.  Loree brought me yellow squash, zucchini and tomatoes from their garden, so I made “garden pasta":

 
got olive oil hot in a skillet, then added in onions


chopped up the zucchini & yellow squash into bite sized pieces

when the onions started to brown, added the zucchini

diced up the tomatoes

once onions/zucchini were brown, added tomatoes & some spices

poured in pasta that had been cooked in the microwave

dumped in some feta cheese from the freezer

YUMM-O!  healthy AND delicious!



 It was YUMMY!!!!!  By the time we finished eating, it was time to SKYPE with Janice...which amazingly worked for the netire 70 minutes we were talking!!!  After that, it was TV, snuggling and bed.
